very easy, quick, and yummy! i made it with broccoli and balsamic vinegar... when i make it again, i will cook the broccoli a minute or two longer.

roast chicken and broccoli with shingled potatoes (potatoes are new recipe!)
the chicken and broccoli were delicious (some of my fave basic recipes), but this new way to bake potatoes... yum, yum, yum! the tops and bottoms were crispy and the center was like a traditional baked potato. i will definitely make potatoes more often this way!

tonight (for the first time!) i cooked bacon in the oven... it was easy and virtually mess free (still had to clean the pan, of course!)

the closest we've been to living in the south, was pensacola, fla. while living in the florida panhandle, we were lucky enough to visit mobile and new orleans. spending time there (and with sweet southern ladies in florida as well!), i developed a love for jambalaya, gumbo, etoufee, beignets, and king cake. i've taken a few years off from making a mardi gras king cake (haven't made one since m&M arrived on the scene!), but this year the tradition is back with a new recipe. this one is much better then my old one!

given my new year's resolution to make one new recipe a week, i was super excited to be invited to participate in a recipe exchange! tonight, i will be cooking my first recipe from the exchange... EK's chicken casserole!!
the casserole was super yummy! i made a mistake and didn't defrost the frozen hash brown potatoes first... i'm looking forward to trying this again!!

i've made this quiche several times, it always turns out delicious... tonight was another story... i don't know what i did, but it didn't cook... we got pizza and beer :)

bacon sloppy joes
an old favorite, but with a few twists...
i ran out of ketchup, so i used extra extra thick worcestershire sauce, a little tomato paste, and a splash of vinegar
instead of bacon, i used extra thick applewood smoked bacon
all this deliciousness was served on toasted whole wheat roles

Goal achieved: yes and no... I tried a lot of new recipes, but didn't do it each week... This has been so fun... Can't wait to start cooking next week!
